Chickpea & Edamame Salad

Ingredients

  • 1 can chickpeas 15 ounces
  • 1 can edamame beans
  • 1 can peppers finely chopped
  • 1/2 can shredded carrots
  • 1/4 can dried cranberries
  • 1 clove garlic minced
  • 1/4 can olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1/4 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. 1. Mix the Dressing: Combine garlic, olive oil, lemon juice, vinegar, and seasonings in a large bowl; whisk well.

    2. Salad: Add all the salad ingredients into the bowl with the dressing. Toss to evenly distribute.

    3. Serve immediately or chill in the refrigerator until ready. Enjoy!
